Marita Sauce (Pandanus) mixed with Beans, Greens and Parsley.

Home cooked meals are often cheap and easy to make. Most of the ingredients are collected from your own garden especially the greens and vegetables.

Marita as it's called in Papua New Guinea or pandanus is the most delicious tropical fruit crop found in our country. Each province have their own style of growing and cooking.

Basically It is boiled and the juice is squeezed out from the bones.

The dish I'm sharing here is focused mainly on the sauce mixed with greens and vegetables. The bones are totally removed.

I have prepared the following:

▪️8 Maritas (Pandanus)
▪️Few sweet potatoes
▪️A handful of bush greens
▪️Some green beans
▪️4 Maggi cubes
▪️1 teaspoon salt
▪️A handful of Parsley leaves
▪️Two cups water

Steps:
🔸️Boil the marita in a big pot. Cover the top with bush greens and aluminum foil to retain the heat.

🔸️At the same time, boil the sweet potatoes in a separate pot.

🔸️When boiled, drain the water from the marita (pandanus) and set aside to cool for at least 20 minutes.

🔸️Cut 2 Banana leaves, heat them over the fire and place them neatly inside a big copper dish.

🔸️Place all the cooked Marita inside the dish and start squeezing until the bones are separated from the remaining meat. (Meat and bones are thrown away)

🔸️Keep squeezing the juice out of the bones. The bones are separated from the sauce. Add 2 Cups of water and squeeze to boost the cream.

🔸️Use the strainer to drain out the sauce from the remaining bones.

🔸️When all the sauce is squeezed and drained into the bowl, Clear the space and prepare your greens and vegetables.

🔸️In 2 clean bowls separate the sweet potato from the greens.

🔸️The Beans and greens are mixed together thoroughly. Add some parsley and mix as well.

🔸️Pour the Marita sauce into the greens and mix thoroughly until the greens and beans are covered in sauce. ( they turn red in color)

🔸️Add 4 maggi cubes and 1 teaspoon Salt and mix thoroughly together with the greens.

🔸️ Pour some Marita sauce over the sweet potatoes and serve on plates.

Health Benefits of Marita:
🔸️Full of Calcium for bone health
🔸️High in Fiber and Antioxidants
🔸️Has rich source of minerals like Phosphorus, Calcium, and Iron.

This dish took around an hour to prepare excluding the cooking time.

In my next post I will show you how to cook my favourite greens covered in aluminum foil and hot stones.

Thank you for reading and hope to hear how you prepared your Marita dish.
